Thank you for your question. Many will put their unfinished cedar benches outside without any sealing or staining. There are a number of factors that will shorten the life of your bench and thus adding a sealer to it for the first several years will lengthen it's life. Select a good brand like Cabot or Olympic. And if you aren't a seasoned finisher, applying a water based sealer will be much easier. Things like direct sun, tons of tree droppings, lots of moist weather can all effect your bench so adding a sealer is good but not mandatory.
